Depending on what you want...

Do you want an original bike in top condition or a daily driver where it is not importantant that everything is in perfect original condition.

I think the most critical point are the crankshafts and the cylinders.
Everything else can be replaced by cheaper alternatives to Yamaha parts.
My bikes:
RD500 YPVS 1GE
RD350 YPVS 31K 1985
Honda CBR 1000 RR SC57
Yamaha R1 RN04

If you are looking to aquire just the motor, I'd think you can expect to pay from $2500.00-$5000.00+ US Dollars, (depending upon condition. Rebuild costs outsourced to a builder I see around the same $2500-$5000.00.

So just a motor and a rebuild will likley place you around $5000.00 min to around $8000.00+

If you searching for a complete bike either a RZ/RD 500 or a RZV500 prices are everywhere, but realistically expect to pay withinin a window of lets say $9k on the low side for a clean runner to $20k plus for a pristine example. Cost of a total concours restoration likley to exceed 25k-30k after parts & labor.

I think what Old RZ says above is accurate. The pricing situation has changed quite a bit in recent years as middle aged guys with disposable income try to reclaim some of their wasted youth and in doing so have driven up prices.

It also depends on where you are as some regions will simply have fewer engines available and the engine will be priced accordingly. The final cost for any engine will be highly dependent on your rebuild specifications. You get what you pay for. To build a proper V4 2 stroke has never been inexpensive.
